Latkes (Makes 30!):
· 1.13 kg potatoes shredded (I blot them so they aren’t too damp, but still starchy)
· 1 large onion, shredded
· 81 g matzo meal or bread crumbs
· 2 large eggs, beaten
· 1.25 tsp salt, or more to taste
· 0.5 tsp pepper
· grapeseed or vegetable oil for frying (about 1 1/2 cups — choose an oil with a high smoke point)
· 51.25 g schmaltz (optional)
Mix the potatoes, onion, crumbs, eggs and salt and pepper into flat pancakes, and fry in hot oil until brown.
Best eaten hot.
