Turkey and Ham Pie
Ingredients:
· 30 g butter
· 1 large onion, finely chopped
· 450 g mushrooms, sliced – These are optional
· 275 ml cream
· 100 ml turkey or chicken stock
· 675 g cooked turkey, and ham leftovers, cut into 2cm chunks (I find leg ham to work best for this, as it’s chunky)
· 1 tbsp chopped tarragon, or marjoram
· puff pastry, rolled out to ½ cm thickness, enough to cover the pie
Extra: Cranberry or Redcurrant Sauce to serve
Instructions:
Preheat Oven ( I usually do around 200/180, depending on the oven)
Sweat the onions in some butter. (and the mushrooms if you are cooking with these)
Add stock and cream
Add the chopped up meat until it starts to thicken and boil
Put in baking pan and layer Pastry on top. Make small cuts to let steam escape.
Bake until Pastry is golden brown and leave to cool before serving.
