Festive Treats Recipe: Bread and Butter pudding

A classic Festive treat, you can never go wrong with a Bread & Butter pudding!

Bread and butter pudding
You can either use white bread, or panettone to make it even more special. You can also add Bourbon for an extra kick. I find a pyrex dish works well for this.
Ingredients
200g (or more) Bread/Panettone
3 Large Eggs
300 ml Milk
300ml Cream (at least double cream)
25 g melted Butter
½ tsp Allspice
½ tsp Cinnamon (and More to sprinkle on top after)
¼ tsp Nutmeg
4 Tablespoons Sugar
1 Tsp Vanilla Extract
Bourbon (optional) – YOU CAN ALSO USE BOURBON VANILLA EXTRACT
Instructions
1)Line your baking pan with butter- be generous- this will stick!
2) Put bread in a layer in the pan- I tend to cover the edges
3)Beat the milk, cream, melted butter, sugar, eggs, spices and vanilla together on a LOW heat to make a Crème Anglais .
4) Pour some of the hot mixture over the layer of bread (about half)
5) Add another layer of Bread
6) pour the rest of the hot liquid over the bread, so it’s soaked.
7) sprinkle cinnamon and Brown sugar on top to caramelise
Heat the oven to 160c/fan 140c/gas 3. Bake for about 45 mins or until golden – it’s ok if this is not too dry, but you don’t want it to come out sloppy either…
Can be served with Vanilla Ice Cream too.
